From today’s breakup luncheon: Kath’s Relish

Original Recipe from Gordon Ramsay – now modified:

2 Tablespoons extra Virgin Olive Oil

1  Leek – sliced thinly

2-3 Red Capsicum sliced thinly – sprinkle with a little salt.

Cook on medium until soft – turning occasionally.

Add 2-3 Tablespoons Balsamic Vinegar and 2 heaped teaspoons Brown Sugar

Cook until soft and combined.  Add 2 extra Tablespoons Extra Virgin Olive Oil at end and serve.
